2- 8 oz cream cheese (NOT fat free)
1 cup blue cheese dressing (chunky works best)
6 to 8 oz red hot sauce
2 cups of cooked, diced chicken or 2 cans of chicken breast (drained). I cooked my own chicken and I recommend doing that.
1 cup diced celery (optional)
8 oz Monterey Jack cheese shredded
Melt 1 cream cheese at a time on medium heat, stir in dressing and hot sauce. Remove from heat and add chicken and celery. Pour into 13 x 9 inch pan. Sprinkle Monterey Jack cheese and bake at 350 degrees for 25 minutes. Serve with Scoop Tortillas.
“I have the same recipe; however we make it a little different. In the recipe I have you mix the chicken pieces with the hot sauce and let soak for an hour or so. You then take an ovenproof dish. Smear around the softened cream cheese. Layer on the chicken soaked in hot sauce. Layer in the blue cheese and chopped celery. Top with cheddar cheese and bake for 20-30 minutes.” – RainiePiccione
