German Potato Salad


6 medium sized potatoes. Cook and peel and cut into ¼ in slices. Dice and pan fry 12 slices bacon. Set aside.
Peel and chop 3 mediums size onions (about 1 ½ cups)
Put 6 Tbsp of bacon drippings into a saucepan. Add onion and cook until transparent. Stir in:
1 cup plus 2 Tbsp white vinegar
1 ½ Tbsp sugar
1 ½ tsp salt
¼ tsp pepper

Heat mixture to boiling. Add the diced bacon to the onion and vinegar mixture. Pour over the hot potatoes and toss lightly to coat evenly.

#2…My favorite way.

Boil potatoes and slice into small pieces. Chop and dice onions and add to the potatoes. Start with about 2 Tbsp of white vinegar and same amount of oil, salt and pepper to taste. You may need to add some warm water (starting with a Tbsp. at a time) till the salad doesn’t look so dry. You may also add to this a cucumber that has been grated. If you add the cucumber you should grate and let sit awhile and then squeeze out the access water from the cucumber before adding to the potato mixture. (This is the authentic version of Bavarian potato salad.
