3 – 8oz pkgs of cream cheese
1 ¾ cups sugar
¾ cup heavy sweet cream
3 level Tbsp of flour
16 egg yolks
½ tsp of vanilla pinch of salt
1 tsp lemon rind
3/5 cup melted butter
Softened cream cheese, sugar and flour. Use the high speed of mixer, lower speed and add 16 egg yolks one at a time. Mix for 5 min. Add melted butter, mix of 1 min.
In a 9″ spring form pan (greased well with shortening) crush about 6 graham crackers. Dust pan with graham crumbs. Pour in cream cheese mixture.
Preheat oven to 345 degrees. Bake for 45 mins. Remove from oven, cool at least an hour. Arrange fresh strawberries on top.
I have replaced the cheeses with low fat cheeses and it still comes out really good.
