Mushroom Stew with Punch-Fungi

A lot of people are vegetarians like me so I have to be creative in preparing meals daily. I came up with a real winner some time ago. It’s simple to prepare and won’t flatten yer wallet. – Tony Leone

Canned butter beans…any brand.

Lace pan with olive oil and heat. Add mixture of mushrooms, cloves of garlic, onions, and diced green peppers. Sauté until brown. Drop a can of butter beans on the mixture. Stir until blended. Cover and simmer for a few minutes until the aroma gets to ‘ya.

Serve with real Italian hard crust water bread. Enjoy!
